1. Smell
Salmon flesh should not have a strong fishy smell. The fresher the salmon, the more subtle the smell will be.
If it smells very fishy or even worse, sour, then it probably has gone bad and should be thrown away immediately.
Fish that is at least one day old will develop an ammonia-like smell. This is caused by enzymes in the fish itself, but it can be used to tell if your salmon has gone bad.
A strong ammonia-like smell is very common with older fish and should not be mistaken for a milder scent that new fish gives off.
2. Appearance
Salmon flesh should be bright red or pinkish-red in color.

If the fish has turned mostly white or grey with a very small hint of pink or orange then it is no longer fresh and should not be consumed under any circumstances.

How Long Does Salmon Last?
The shelf life of fresh, wild-caught salmon is about 4 days in the fridge and 3 months in the freezer. For cooked salmon, this time frame extends to 5-6 days and 2 to 3 months frozen.
Frozen salmon can last about 3-6 months. However, if you’ve thawed it out and it is not eaten within 2 days, you should refreeze it.
If you open your package of salmon and it smells bad even though it has been stored correctly, you should throw it away immediately.
If there’s only a small amount left, it should be eaten more quickly than usual since the risk of getting food poisoning increases with spoiled foods.
